Aged on the lees for at least twelve months and finished in the time-honoured traditional method, with a graceful hint of sweetness that sets it apart from a classic Brut. Radiant pale gold, threaded with a fine, persistent stream of bubbles. The nose opens with sun-ripened peach, dried apricot, and wild honey, layered with a whisper of lemon cream biscuit. Silky and expansive across the palate – stone fruit and tropical notes carried by a vibrant acidity that keeps every sip elegant, never heavy. The finish lingers long and luscious, trailing honeyed citrus and a final flicker of freshness.
Serving Suggestion/Food pairing: Serve well chilled (6–8°C). Enjoy on its own or paired with dessert, fruit tarts, or subtle spicy dishes.
